Garden Recipes
The abundance is upon us! Gardens all around are producing so many delectable treats and the party is getting more exciting day after day. For this week's blog, I’ve compiled some of my favorite garden fresh food and drink recipes I have been enjoying. In joy, in-joy, in joy!!!!!!
Beetroot hummus
1 Beet
1 can rinsed Chickpeas
1 (maybe 2) garlic cloves
1 juiced Lemon
1/4 cup Olive oOil
Salt & pepper to taste
Prep your beet by simmering with garlic and oil on the stove top, roast or boiling whatever you prefer
Add all ingredients to the blender and mix till smooth
* If it doesn’t get moving in the blender add a little more oil or a dash or water
Vegan Pesto
2 fistfuls of Basil
1 fistful of greens (kale, beets greens, carrot tops) *optional
1 (maybe 2) garlic cloves
1 juiced Lemon
1/4 cup olive oil
Nutrition Yeast to taste
Salt & Pepper to taste
*OPTION* add a can of Cannellini beans to make it into a Pesto dip
tulsi sun syrup
Tulsi aka Holy Basil
Water
Honey
Harvest Tulsi stems, leaves and flowers
Fill a mason jar with Tulsi Basil
Pour Water over to cover plant matter
Add 4 tablespoons of Honey
Shake and let sit in the Sun for 8 hours
Enjoy diluted with water over ice for iced teas, diluted with boiling water for hot tea, or mixed over ice with your fav liquor for a cocktail or seltzer for a mocktail... whatever you fancy! Don't have Tulsi growing in your garden? Try Mint!
Elderflower Gin

Lime
Harvest Elderflower and cut off the little tiny white flowers ONLY, no stems allowed!
Fill a mason jar with Elderflowers
Pour Gin over to cover plant matter
Add a slice or 2 of lime to the top
Cover and let sit for 1 week
* OPTION* If you have a sweet tooth add a tablespoon or two of honey, raw sugar or agave.

There’s lettuce, kale, basil, oregano, parsley, mint and tulsi ready for the pickin’. Tomatoes will be ready in a couple of weeks too!
